Just because a restaurant is farm-to-table, vegetarian or vegan, doesn’t mean it is healthy. Hydrogenated oils, high-fructose corn syrup, artificial food dyes, preservatives, bleached flours & refined sugars may all tick all of these notes but are far from good for you. And even when restaurants source high-quality farm-to-table ingredients, they often fill in the gaps with these less than quality ingredients. We design all of our menu items with health in mind and we only ever use REAL food. That means you will never find any of these artificial ingredients in our pantry or our recipes. When you dine at our restaurant, you can taste and feel the difference of high quality, good for you ingredients in every single thing that we make.
Is Proper & Wild a farm to table restaurant?
Proper & Wild is as close to a farm to table restaurant as you will get in Florida. Being a vegetarian restaurant, almost everything we prepare is produce. With the limited growing season that we have in Florida, there is no way we could source all the produce we need from local sources year-round. We source produce from as many local farms as we can when it is in season. Some of our favorite local produce vendors include Frog Song Organics, Sugar Top Farms, Fleet Farming, & Waterkist Farms and we source the little dairy that we use from Daikon Dairy and our eggs from Lake Meadow Farms. We source as many products as we can from local sources and supplement elsewhere to fill the gaps. Our menus change weekly so we are able to highlight and cook with local ingredients currently in-season and what we as chefs are inspired by.
Are you a completely vegan restaurant?
Our menu is completely vegan with the exception of farm to table eggs we source from Lake Meadows and local milk we source from Daikon Dairy. Our organic milk is available in our locally-roasted coffee and smoothies and our local, free-range organic eggs are available during brunch, lunch and select dinner items. We never make any of our sauces, marinades or baked goods with non-vegan items so unless it is clearly indicated as an ingredient, it is vegan.
Is Proper & Wild a completely organic restaurant?
Proper & Wild is an organic restaurant where it counts and always 100% non-GMO. What that means is although we are not a 100% organic restaurant, we do a heck of a good job sourcing as much organic as we can and only make non-organic choices where we feel like we are safe to do so.
The reason why we are not 100% organic is that there are simply just some ingredients we want to cook with that we don’t have access to organic and as a chef’s that can put us in a box. We buy our produce by following the principles of The Clean 15 and Dirty Dozen. Our spices are organic, our beans are organic, our grains are organic, and a whole lot of our other ingredients are organic too like most of our flours, sugars, superfood ingredients, and miscellaneous pantry items. We are paving the path for organic distribution chains in Florida and since 2016 we have made huge waves! Where it used to be really hard to source anything organic, we have now implemented dozens of new organic distribution chains and we look forward to continuing to work with our distributors and suppliers in sourcing more and more organic as Winter Park continues to vote for organic restaurants.
Do you have gluten-free options?
At Proper & Wild, we have tons of options for those looking to follow a gluten-free diet. We love using naturally gluten-free ingredients like vegetables, legumes, and quinoa and make all of our sauces in-house so there is never any gluten hidden as an additive or binder, ever. We don’t currently offer gluten-free bread as an option as cooking space is shared with other gluten-containing breads and often “gluten-free bread” contains a lot of artificial ingredients we can’t stand behing. It is something we have considered offering in the future if we are able to find a source we believe in at a price that makes sense.
